1/2 fruit Avocados (101 grams)

1 large Egg (50 grams)

2 strip cooked Bacon (16 grams)

1 tbsp Butter (14.2 grams)

1 cup Spinach (30 grams)

 

Directions

Directions are based on the original recipe of 1 serving

1. Preheat oven to 425. Cut avocado in half, remove pit and skin, scoop out a little of center of avocado to make room for egg. Place avocado in a muffin tin with center facing up. Crack egg into center and sprinkle with salt and pepper. Carefuly lift avocado up and wrap with both bacon slices. Bake for about 18 minutes or until egg is cooked and bacon crispy.

Grab a small sauce pan and melt butter over medium high heat, saute spinach until wilted. Place on plate. Then place avocado boat on top.
