3/16 eggplant, unpeeled (approx 1-1/4 lb) Eggplant (110 grams)
50 grams Italian Spicy Sausage (sugar free)
3/8 cup, shredded Mozzarella cheese (44.8 grams)
3/8 cup Pasta sauce (Sugar free) (103 grams)
3/16 tsp Parmesan cheese (optional) (0.42 grams)

Directions
Directions are based on the original recipe of 5 servings
1. Preheat oven to 500 degrees, slice egg plant into 1/8 inch slices, place in a greased casserole dish. Sprinkle basil, thyme, rosemary, and salt over eggplant.
2. Set aside. In a medium skillet, cook sausage until browned and cooked through, crumbled. Pour over eggplant. Top with tomato sauce and mozzarella cheese and red pepper flakes. Bake for 15 minutes. Top with parmesan cheese.
