Recipe Makes 4 bagels
Servings: 8
If used as a side to another recipe or snack then 1 serving = half a bagel with 1 tbsp cream cheese.
Bagel Dough Ingredients:
1 cup full fat shredded cheese (fiesta/mexican blend cheese is higher fat)
4 tbsp full fat cream cheese
1 cup almond flour
1 whole egg
1 tbsp baking powder
2 tsp sesame seeds in dough or on top (optional)
Bagel Dough Directions:
- Measure out shredded cheese and cream cheese into microwave safe bowl and microwave for 1 minute.
- Take out, mix around and microwave for additional 20 seconds then scoop out cheese mixture into food processor/blender.
- Crack 1 whole egg into mixture, then add in dry ingredients and blend until smooth dough forms.
- Scrap out dough into bowl and place in freezer while oven heats up to 400 F.
- Layout parchmet paper on baking sheet, take dough out of freezer and divide into 4 equal parts. Roll out dough or form into desired shape, place on baking sheet and in oven for 15 mins or till lightly brown on top.
- Take out of oven, let cool before cutting bagel in half and adding cream cheese. I also enjoy toasting 1 half of the bagel, then add cream cheese.
