Ingredients:
1 cup unsweetened coconut milk
1/4 cup heavy whipping cream
1/4 tsp cream of tartar or
xanthan gum
1/4 cup unsweetened coconut
flakes
Sweetener Options: 4-5 vanilla
stevia drops, 1packet/1tsp
truvia or erythritol (swerve) or
1 tbsp Walden Farms 0 calorie
syrup
Directions:
1. In a small bowl whip together the coconut milk, heavy cream and cream of tartar/
xanthan gum. Mix well until thickens up.
2. Add in and mix remaining ingredients.
3. Set in freezer to chill till hardens up, then Serve!
