3/4 tsp Coconut oil (3.4 grams)
1 1/2 oz Canadian Style Ham (42 grams)
1 1/2 oz Parmesan cheese (42.5 grams)
2 oz Baby Spinach (56.7 grams)
1 large Egg, hard-boiled (peeled + sliced) (50 grams)
1/4 fruit, without skin and seed Avocados (chopped) (34 grams)
1/4 tsp Pepper (to taste) (0.53 grams)
Directions
Directions are based on the original recipe of 4 servings
1. To make dressing:
Combine the following into a food processor or blender and blend
• 1/2 cup fresh cilantro leaves
• 1/4 cup unsweetened almond milk or whole milk
• 1/4 cup mayo
• 3 cloves garlic coarsely chopped
• 1/2 tsp salt
• 1/4 tsp pepper
• 1/4 tsp paprika
• 1/8 tsp chipotle powder
2. To make salad:
Melt butter in a large skillet over medium heat. Fry Canadian bacon slices until browned and crisped (you will need to do this in batches). Slice into matchsticks.
Divide spinach among 4 plates. Top with sliced Canadian bacon, hard boiled eggs and avocado. Sprinkle with pepper, parmesan and drizzle with dressing
