LUNCH: ​The REAL Thing Lasagna

Ingredients scaled to: 1 serving

1/3 large Egg (16.7 grams)

2/3 oz Cream cheese (18.9 grams)

2/3 tbsp Parmesan cheese (3.3 grams)

3/16 cup, shredded Mozzarella cheese (23.3 grams)

1/16 tsp Italian Seasoning (0.17 grams)

1/16 tsp Garlic powder (0.26 grams)

1/16 tsp Onion powder (0.10 grams)

1/16 tsp, ground Pepper (0.10 grams)

1 1/3 oz. Grass Fed Ground Beef (37.3 grams)

1 1/3 oz Spicy Andouille Sausage (Sugar Free) (37.3 grams)

1 serving Marinara (see below)

3/16 cup, shredded Mozzarella cheese (18.7 grams)

3/16 cup Ricotta cheese (41.3 grams)

3/16 tbsp, ground Oregano (1 grams)

3/16 tsp Rosemary (0.20 grams)

3/16 tsp, ground Basil (0.23 grams)

3/16 tsp Italian Seasoning (0.67 grams)

3/16 tbsp chopped Onions (1.7 grams)

 

Directions

Directions are based on the original recipe of 6 servings

1. Noodles:
Preheat oven to 375, Line a 9x13 baking dish with PARCHMENT paper. GREASE parchment paper.

Grab a large mixing bowl, and cream together the cream cheese and eggs with hand mixer. Add in parmesan cheese, Italian seasoning, garlic powder, white pepper, and onion powder. Mix until all is combined.

With a spatula, fold the mozzarella cheese in until combined.

Spread the mixture into a baking dish, making an even layer. Bake in MIDDLE rack for 20-25 minutes. Remove from oven and place in fridge to cool for about 15-20 minutes. Then cut into thirds, making 3 evenly sized noodle layers.
 

2. Filling:
Place a large skillet over medium high heat and combine the beef, sausage, onion, oregano, garlic powder, basil, rosemary, and a dash of salt. Cook until meat is browned.
Drain excess fat from pan and add in 1 cup marinara sauce to meat. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally.

3. Assembly:
Pour 1/4 cup marinara sauce to bottom of a glass loaf pan. Top with first noodle layer. Pour 1/3 of ground beef & sausage mixture. Top with 1/3 cup of mozzarella cheese and 4 tbsp of ricotta cheese, cover with another noodle and repeat. Cover the top noodle with remaining meat sauce, marinara, and mozzarella cheese. Sprinkle Italian seasoning on top and bake for 20-25 minutes.
 

4. To make Marinara:

Ingredients:

▪ 1/4 cup butter
▪ 1/4 cup extra virgin olive oil
▪ 1/2 cup diced onion
▪ 2 tsp garlic minced
▪ 3.5 lbs fresh Roma tomatoes
▪ 1 tbsp Italian seasoning
▪ 2 tsp sea salt
▪ 1 tsp pepper
▪ 1/2 tsp red pepper flakes.


Steps:


Grab a large sauce pan and fill with water. Add tomatoes and bring to a boil. Boil for about 10 minutes. While tomatoes are boiling, heat butter & olive oil in large stock pan to medium heat.
Add onion & garlic, cook for about 3-4 minutes or until tender. Add tomatoes to pan and mash with a potato masher, if you like your marinara to be chunky. Or you can blend tomatoes in a blender prior for a smoother consistency. Stir in Italia seasoning, salt, pepper, and red pepper flakes. Bring to a boil. Reduce heat and cook for 40 minutes. Stir in 3 ounces of parmesan at the end.
