Ingredients scaled to: 1 waffle
1 1/2 large Egg (75 grams)
1 tbsp Butter (14.2 grams)
1/8 tsp Salt (0.75 grams)
1/8 tsp Garlic powder (0.39 grams)
1/4 tsp Italian Seasoning (1 grams)
1/8 tsp Baking powder (0.57 grams)
1 1/2 tbsp. Coconut Flour (21 grams)
1 1/2 oz Breakfast Sausage (42 grams)
1 large Egg (these are used to fry) (50 grams)
1 tbsp Avocado Guacamole (15 grams)
1 tbsp Pico de gallo (16 grams)
Directions
Directions are based on the original recipe of 2 waffle
1. Combine eggs and melted butter in a blender and mix until fully combined.
2. Add in the seasonings and baking powder and mix.
3. Add in coconut flour and mix until batter is smooth.
4. Fold in sausage and allow batter to rest.
5. Heat a Belgian waffle iron and spray with nonstick cooking spray. Pour half the batter into the iron and cook.
6. While waffle is cooking melt remaining butter in a saucepan and fry eggs to desired doneness. Place eggs onto 1 waffle and top with 1 tbsp of each guacamole & pico.
